Our
Company
Our family run business has been dealing continually with olives for the past 50
years or so and in this way we have built up a wealth of know-how in the
preparation and aromatisation of olives of all shapes and sizes. On our AOC approved premises we prepare and aromatise all varieties of olives
from the region of Provence and the whole Mediterranean area.
Amongst these are the superb local green olives with names such as "Aglandau"
or "Salonenque" traditionally prepared immediately after harvesting by splitting
them and flavouring very simply with wild fennel. These olives are now covered
by the AOC approval "Olives Cassées de la Vallée des Baux". We also prepare green Picholines, green Lucques, black Grossanne olives as
well as the Tanche variety. All our preparations use traditional artisan Provençal methods keeping in
mind a strict respect for the quality and authenticity of the finished
product.
In this way, olives have become a major culinary aspect of French
cuisine.
